The Seven Moles

These seven wonders of the (Oaxacan) world are packed into one fabulous culinary experience in Etla with Andrea, our favorite chef and vendor from the Pochote Organic Market. The seven moles (or Oaxacan sauces) are the most typically-recognized flavors in Oaxaca, although there are infinite variations. Each one is a labor of love, boasting a myriad of strong, complex flavors that are born from the creative mixing of prominent local ingredients.

We will be making the following delicious moles that exemplify the best of what Oaxacan gastronomy has to offer:

Amarillo (Yellow)

Verde (Green)

Chichilo

Estofado

Coloradito

Negro (Black)

Rojo (Red)

We will arrive in Etla at 11 a.m. and will work with Andrea to create our seven delicacies. Meanwhile, Andrea will put on a pot of rice and heat up some tortillas with which we can try all of our seven creations.

Logistics:

Where: Andrea and Noé´s home in Etla

Includes: Instruction on how to make 7 traditional Oaxacan moles. Lunch.

Transportation: Optional (Link to purchase transportation after “Book Now” button)

You can purchase roundtrip transportation from Tlayudona for up to 4 people for 450 MXN (shared cost) via the button below, or you can arrange your own alternative transportation. If you elect your own transportation, we will provide you with the exact location upon confirming your purchase.

Time Frame: 11 a.m.- 3 p.m. (Not including transportation)

10 a.m.- 4 p.m. (Including roundtrip transportation to/from Tlayudona.)

Cost: 800 MXN per person.

This class is encouraged for adults or families with children over age 10, since the children will be around open flames. Smaller children are invited to attend our quesillo-making experience at the same location.
